Every morning our mom and makes coffee before breakfast, but it's not just your average cup: the coffee she makes is bursting with super-foods, chai infused flavors, and is delightfully healthy. She calls it her "Super-food Coffee".
My sister and I thought, why not try our mom's super-food coffee ingredients in oatmeal? What resulted is this delicious recipe for Superfood Chai Latte Oatmeal, creating a warming, creamy breakfast packed with superfoods and a flavorful kick.
Cook time: 5 mins Serves:1-2
1 cup oats
2 cups nut milk or water (can sub 1 cup liquid for coffee)
2 tsp chia seeds
1 tsp maca powder
2 tsp cacao powder
1 tsp cinnamon
1/4 tsp turmeric
1/4 tsp ginger
1/8 tsp nutmeg
1/8 tsp cardamom
1 tsp vanilla extract
1-2 tbsp maple syrup (or coconut)
1. In a cooking pan, combine oats, almond milk or water, maple syrup, spices, maca and cacao powder, and vanilla over medium/high heat.
2. Reduce heat and let simmer for 4-5 minutes, stirring frequently until the oatmeal becomes thick.
3. Serve in bowls topped with fresh berries, fresh figs, cacao nibs, pumpkin seeds, and almond butter if desired.
