This Sunday, we decided to spend the afternoon baking, resulting in a fresh batch of Gingerbread Spiced Granola. Ginger is one of our favorite winter spices, and it makes the kitchen smell wonderful, reminding us of candied ginger, maple syrup, and candied pecans--the perfect flavors of winter.
Bursting with flavors and infused with ginger spice, this delicious Granola is perfect for sprinkling on smoothies, dairy-free yogurt, or a granola bowl. Sweetened naturally and packed with super foods, this recipe can also be made gluten free.
Cook time: 20-30 mins Makes: 2-3 cups
1. Preheat the oven to 350 degrees F and line a baking tray with parchment paper.
2. In a bowl, combine all ingredients and mix thoroughly to coat the granola with maple syrup and coconut oil. Spread evenly onto the baking tray and bake in oven for 20-30 minutes, until the edges start to brown. Check the granola every 10 minutes and stir to make sure it does not burn.
3. Remove from oven and let cool for 20-25 minutes before serving. Store in an airtight container for 4-5 days.
