It's summertime and watermelons are the perfect summer fruit for outdoors activities and summer get-together. From lakeside parties to weekends at the beach, watermelons go hand in hand with sunshine and good times. What better than to bring a watermelon pizza with a sweet coconut cream to your next summer party?
Since we love to keep active and healthy throughout the summer we love enjoying healthy treats such as this summery watermelon pizza. This recipe is simple, quick to make, and guaranteed to be a hit!
Prep time: 10 mins Makes: 8 slices
For the fruit
4 medium strawberries
1 ripe kiwi
1 ripe peach
Handful of blueberries
Several mint sprigs
For coconut frosting
1 14 oz can of full-fat coconut milk
2 tbsp powdered sugar (can sub for maple syrup)
1 tsp vanilla
1. Chill the coconut cream in the fridge for at least 24 hours prior.
2. Next, slice the watermelon longways into about 3 inches thick. Then cut into pizza shaped slices.
3. Remove the chilled coconut milk from the fridge and scoop out only the hard coconut creme. Using a mixer, whip the coconut cream with the sugar and the vanilla extract until combined. Using a spoon, spread the cream over the watermelon slices and top it with the fresh fruit.
4. After putting on the fruit, sprinkle some coconut chips and mint leaves and enjoy!
