This recipe for gluten-free Gingerbread Granola is bursting with fall flavors, perfectly crunchy, and smells incredible as it bakes (think gingerbread cookies). Great for sprinkling on smoothies, dairy-free yogurt, or even oatmeal.
Cook time: 20-30 mins Makes: 2-3 cups
2 cups rolled oats
1/3 cup slivered almonds
1/3 cup raisins
1/3 cup sunflower seeds
1/3 cup pumpkin seeds
1/2 tsp cinnamon
1 tsp ginger powder
Dash of nutmeg
1/4 cup coconut oil
1/2 cup maple syrup
1. Preheat the oven to 350 degrees Fahrenheit and line a baking tray with parchment paper.
2. In a bowl, combine all ingredients and mix thoroughly to coat the granola with the maple syrup and melted coconut oil. Spread granola evenly onto the baking tray and place in oven for 20-30 minutes, or until the edges start to brown. Check the granola every 10 minutes and stir to make sure it does not burn.
3. Remove from oven and let cool for 20-25 minutes before eating.
